PS:1 Club-Mate

PS:1 Club-Mate is our home brew version of a Yerba Mate flavored soda, as popularized by the german brand Club-Mate. It was first brewed at PS:1 in February 2019 by Joe Mertz.

Recipe

For 5 gallon batch:

Ingredients:

  • Yerba Mate Tea - 3.5 Cups
  • Brown Sugar - TBD (See Brewing Logs)
  • Water - 5 Gallons

Steps:

  1. Bring 2.5 Gallons of Water to a boil
  2. Brew tea, steep for 7 minutes
  3. Add sugar to sterilized keg
  4. Strain tea into keg
  5. Add remaining water to fill keg
  6. Pressurize keg to 30-50 PSI and rock back and forth to force carbonate
  7. Let settle. Return pressure to 2-5 PSI to serve

2019-03-01 Joe Mertz 5 Gallons - Corny Keg First attempt at kegging and force carbonating. Overcarbonated to 80 PSI. Good, but too sweet and too fizzy. ~3.5 cups sugar.
2019-03-07 Joe Mertz 5 Gallons - Corny Keg Second Keg Attempt. Carbonated appropriately at 40-50 PSI and shook. Less sweet, good but probably not sweet enough. ~2 cups sugar
2019-03-23 Joe Mertz 5 Gallons - Corny Keg Third Keg Attempt. ~3 cups sugar
